The production of Providence Rum starts with a rare and special variety of sugarcane called Canne Cristalline. This very old heritage cane is grown by Michel Sajous in St Michel de l’Attalaye in the central north of Haiti. Agriculture is completely organic, without the use of fertilizers, pesticides or chemicals. The harvest takes place between December and August, when the cane is cut by machete and transported to Distillerie Chelo by mule. It is then pressed for juice or boiled for sirop.
